Ingredients (to serve four):
4 slices of thickly sliced tiger bread
2 eggs
200ml milk
1 tbsp butter
30g soft rindless goats cheese
100g thick goats cheese yoghurt
1 tsp lemon zest
2 pears
Honey, to serve
Pinch of salt
STEP ONE: Make the French toast mixture
Start by toasting your slices of tiger bread. In a large bowl whisk together the eggs and milk, and a pinch of salt, then dunk your slices of toast into the mixture, making sure they are well covered. Heat half the butter in a large frying pan over a medium heat.
STEP 2: Prepare the goats curd
While the butter is melting, mix together your goats yoghurt and the softened goats cheese. Add some lemon zest to the mixture and stir.
STEP 3: Fry the French toast
Once your butter has melted and the pan is hot add your first two slices of French toast. Leave for a couple of minutes until golden brown and then flip. Continue cooking the toast on the other side for a couple of minutes. If you pan is small you can cook the toast in batches.
STEP 4: Prepare the pear
While the toast cooks on the second side, cut the pears into quarters and cut out the core, then slice into thin slices.
STEP 5: Serve up
Serve the French toast hot with a big dollop of the goats yoghurt mixture, a few slices of pear and a generous drizzle of honey.
