How To Make Lunch More Exciting In Just 60 Seconds

Eating the same soggy sarnies or lacklustre salad every day for lunch can be pretty dull.

Thankfully, David Bez, author of 'Salad Love: How to Create a Lunchtime Salad, Every Weekday, in 20 Minutes or Less', has created some fun videos to show us how to shake things up a bit.

The salads, originally created for The Wellbeing Network, are super healthy and easy to make. What's not to love?

Ingredients:

A handful of Nordic pre-cooked shrimps

1 small carrot

3 tender stem broccoli

2 small pak choi

100g brown rice

A handful of coriander

Dressing:

1 tbsp of cold-pressed rapeseed oil

1 tsp of dark soya sauce

1/2 fresh chilli

a pinch of salt

Ingredients:

50g goat's cheese

1/4 of a roasted butternut squash

1 super small red onion

A few cavolo nero leaves

A handful of walnuts

A handful of black olives

A handful of parsley

Dressing:

1 tbsp of cold-pressed extra virgin olive oil

1 tsp of balsamic vinegar

A pinch of salt

Ingredients:

A handful of roasted oyster mushrooms

A handful of steamed green beans

A handful of baby spinach

1 boiled egg

1 tbsp toasted sesame seeds

Dressing:

1 tbsp of cold-pressed extra virgin olive oil

1 tsp of balsamic vinegar

A pinch of salt

Ingredients:

1 steamed beetroot

1/4 of a small cucumber

A handful of mixed baby leaves (spinach and rocket)

A handful of goji berries

A handful of walnuts

A handful of mint

Dressing:

2 tbsp of natural yogurt

1 tbsp of cold-pressed extra virgin olive oil

A pinch of salt
