Ever had Reece's Peanut Butter Cups?!? If not, you have not lived! They are delicious- if you love chocolate and peanut butter... If not, you'll probably hate them, feel free to stop reading now. They are these chocolate cups filled with this peanut buttery goodness. Actually there is no goodness, they are TERRIBLE for you but boy do they taste good! Here's an alternative treat to try, now these are full of goodness, healthy fats & NO sugar.

Don't be deterred by the high fat content of coconuts, the saturated fat in coconut is made up of short-chain and medium-chain fatty acids the body quickly turns into energy instead of storing as fat. Therefore, even though it's high in saturated fat, coconut can aid in weight loss. Half the medium-chain fatty acids in coconut are composed of lauric acid, which is anti-viral, anti-bacterial, anti-microbial and anti-fungal. Coconut can help boost the immune system. Raw cacao has more than four times the antioxidants found in green tea and more magnesium than any other whole food.

This made about six cups, you could use little moulds and make smaller ones too.

2 cups of Coconut Butter

2 tbs raw cacao

Stevia to taste or maple syrup if you prefer

1 cup nut butter of your choice (almond, macadamia, cashew, peanut)

In your food processor blend your coconut butter, cacao & stevia together. Taste it and adjust sweetness as you need. Spoon into the bottom of some silicone cupcake moulds, just a spoonful, spread it out so it is about 1cm thick & pop them in the freezer for about 15 mins. Once they have set, pull them out, place a teaspoon of nut butter in the middle, spoon over some more Choc Coconut butter to cover & then back to the freezer to set. Easy peasey. Thank me later.
