Everyone loves a good roastie, but getting the perfect finish (crisp on the outside, fluffy in the middle) isn't always so easy.
Need a few tips before your next Sunday lunch? Here's what you need to know:
1. Get the potato variety right. Try using an all-rounder like a Desiree.
2. Boil them for 20 minutes until the outside starts to break up before they go near the oven.
3. Make sure your roasting tray is really hot. Pre-heat the tray for 20 minutes before adding the potatoes.
4. For that crispy coating and extra flavour, add two tablespoons of beef dripping to the hot tray.
5. They take longer to cook than you think - leave in the oven for two hours.
6. Season halfway through cooking. Don't add salt right at the beginning - this pulls out the water in the potatoes which will then stick to the roasting tray.
